A local farm with lasting quality

From Chef Peter:

There are not a lot of dairy options here in the East Bay.  Yes, there is some great milk, but most of the name brands all taste so similar.  For a moment a few years ago, there was a milk on the dairy shelf at Berkeley Bowl that stood out from the rest.

It was never homogenized and came from a herd of fewer than 500 cows.  I find that there is more flavor in milk when it is not coming from too many cows.  Its color ran close to yellow due to their diet consisting of only grasses and their breed being Jersey. This is what led me to Burroughs Family Farms, unfortunately, at just the time they were ending their milk production.
It was a sad week. But, I found out that the farm has much more to offer.

Their cattle are sold when their milking days are over, and it makes for great grass fed beef. Because of their dairy background, I find that when the meat is aged, it gives off an aroma reminiscent of cheese making.

The pasture is also shared with orchards of olives and almonds. We have switched over to using their Extra Virgin Olive Oil, and it feels like night has turned to day. No more canola, no more other olive oils. This one covers all the bases and it is made locally.

After the cows graze, the chickens come out to forage and their eggs benefit from their rich wild diet. These yolks are vibrant in their yellow, and their shells are much firmer than generic eggs sold at the store.

I am so grateful for having a wonderful resource and partnership in the Bay Area, to be able to cook great food and share with those who are looking for something tasty, nutritious and sustainable.
