The Table Catering does Thanksgiving!

 I grew up celebrating Thanksgiving in Tustin, Orange County.  I am the youngest brother of three, and my mom has three brothers. It was all of us at my mom’s parents’ house each year. I would say we always had what is considered a typical Thanksgiving experience. We drove one to two hours to a house where a matriarch prepared a meal and everyone else hung out and did what they could find to do. And drinks were around for all adults.

What are your Thanksgiving traditions like?

This is our third year offering Thanksgiving meals and sides to our community. We are bringing back classics I grew up with: whole turkeys and sweet potato pie. As always, we bring great intentionally to sourcing ingredients. Organic and sustainable means for caring for our bodies, our earth, and our future.
 

One thing I am looking forward to is making items that are good for anyone with allergies. Our stuffing this year will be gluten-free. I’ve been having fun testing which gluten-free flour is best for my favorite cooking methods.  There is principle to how stuffing works: a starch soaks all the wonderful liquid, which is then bound together by proteins found in eggs. Savory flavors come from alliums, sweetness from dried fruit, crunch from nuts, aroma with fresh fall herbs like thyme and rosemary.
